I was craving a simple and easy hearty meal of spaghetti (well, it ended up being linguini) and meatballs, and decided to see what I could do with the Beyond Burger. The Beyond Burger patties are the most convincing meat substitute I’ve had yet—in the past they’ve completely fooled even the most carnivorous of my friends, and my omnivore boyfriend loved how these meatballs turned out! The patties are pretty fatty, so they work well for meatballs. Here’s what you’ll need:
Mix all ingredients besides pasta and pasta sauce together with your hands. Form into small balls; should make ~12-15 small meatballs. Refrigerate for at least 30 minutes (more is better). In as large a pan as possible heat up olive oil or coconut oil (I used about 2-3 tablespoons) at medium-high heat, then fry meatballs for ~4 minutes per side. Try not to touch or move them too much, as they are on the crumbly side.
Make pasta as described on package. Coat in sauce and top with meatballs. Voila!
